Cabbage Soup Recipe

How to make a simple, easy cabbage soup. Forget eating it as a "diet" food, eat it because it's delicious, healthy and a great way to up your vegetable intake.

Ingredients

  • 1 tablespoon olive oil
  • 1 white onion diced
  • 3 cloves garlic minced
  • 1/2 small head green cabbage chopped
  • 2 cups slivered carrots
  • 1 red bell pepper diced ( optional)
  • 14 ounces can diced tomatoes with spices
  • 4 cups strong chicken broth

Instructions

  1. In a large stockpot, fry the onions in the olive oil until soft. Add in the garlic and sautee until light brown.
  2. Add in the rest of the vegetables, the tomatoes and the broth.
  3. Simmer until the vegetables are soft , around 40-50 minutes, then serve.

Notes

  • I like to really reduce down the cabbage and cook it well. It will look like a LOT of cabbage, but the water will release from it into the broth and the cabbage will soften up.
