How to make a simple, easy cabbage soup. Forget eating it as a "diet" food, eat it because it's delicious, healthy and a great way to up your vegetable intake.

Ingredients
- 1 tablespoon olive oil
- 1 white onion diced
- 3 cloves garlic minced
- 1/2 small head green cabbage chopped
- 2 cups slivered carrots
- 1 red bell pepper diced ( optional)
- 14 ounces can diced tomatoes with spices
- 4 cups strong chicken broth
Instructions
- In a large stockpot, fry the onions in the olive oil until soft. Add in the garlic and sautee until light brown.
- Add in the rest of the vegetables, the tomatoes and the broth.
- Simmer until the vegetables are soft , around 40-50 minutes, then serve.
Notes
- I like to really reduce down the cabbage and cook it well. It will look like a LOT of cabbage, but the water will release from it into the broth and the cabbage will soften up.
