Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

    Cup of Yum
  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned and cooked through. Drain any excess grease.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion is softened and fragrant, about 5 minutes.
  3. Stir in the chopped cabbage, sliced carrots, and sliced celery. Cook for an additional 5 minutes, stirring occasionally.
  4. Pour in the diced tomatoes and beef broth. Add the dried thyme, dried oregano, paprika, salt, and pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat and let simmer for 30-35 minutes, or until the vegetables are tender and the flavors have melded together.
  6. Taste and adjust the seasoning with more salt and pepper if needed.
  7. Serve the soup hot, garnished with fresh parsley.
