Cacio e pepe, meaning “cheese and pepper”, is a traditional pasta dish from the city of Rome that’s made with Pecorino Romano, pepper and spaghetti.

Ingredients
- 14 oz Spaghetti
- Freshly ground black peppercorns , to taste
- 7 oz pecorino romano (preferably aged), finely grated
- 1 tablespoon rock salt (for cooking the pasta)

- 2 oz pecorino romano , finely grated

- Large frying pan
- Large saucepan
- Whisk
- Mortar and pestle
Instructions
- In a large saucepan, cook the spaghetti according to the instructions on the pack, until just al dente.
- Meanwhile, using a pestle and mortar, finely crush the peppercorns.
- Pour half the cracked pepper into a large non-stick skillet and roast over low heat, stirring with a wooden spoon.
- Take 3 ladles of cooking water from the spaghetti and pour into the skillet, over the roasted cracked pepper.
- Drain the spaghetti, keeping the cooking water on a medium heat, and place directly into the skillet with the roasted cracked pepper.
- Stir the spaghetti constantly using tongs, then add 2 ladles of the spaghetti cooking water, and mix again.
- Pour half of the grated Pecorino into a bowl and pour over 2 ladles of the spaghetti cooking water. Whisk vigorously, and add more cooking water if necessary.
- Add the remaining Pecorino, reserving a little for the end of cooking.
- Add another 1 to 2 ladles of the cooking water, and whisk to obtain a smooth and relatively liquid cream.
- Finish cooking the spaghetti by adding a little more cooking water if necessary.
- Briefly warm the cream by placing the bowl over the steam from the pan of cooking water, and whisk again to bring to a temperature similar to that of the pasta.
- Turn off the heat under the spaghetti, and pour over the Pecorino cream while stirring with kitchen tongs.
- Add the remaining Pecorino and cook the spaghetti over medium heat for 1 minute, stirring constantly with the tongs.
- Serve and finally, sprinkle the spaghetti with the remaining crushed pepper and finely grated Pecorino.
