Cacio e pepe mashed potatoes

Ingredients

  • 1 kg/2lbs potatoes
  • 1 cup milk
  • 4 tbsp butter
  • 1 cup grated Parmesan cheese
  • 1-2 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • salt to taste

Instructions

  1. Cook the potatoes in a large pot of salted water until a sharp knife can easily be inserted.
  2. Drain and allow to stand, uncovered, for 5 minutes for any steam to evaporate then peel the potatoes.
  3. Add the milk and butter and mash. Stir in the cheese and seasonings then season to taste with salt.
  4. Transfer the potatoes to a serving dish and add a knob of butter, a sprinkle of parsley and grated Parmesan to the top.
