Caesar Salad with Shrimp

This caesar salad with shrimp is topped with sweet potato croutons, avocado, parmesan cheese and a creamy avocado caesar dressing.

Ingredients

  • 1 kale chopped (about 12 cups, curly, bunch
  • sweet potato croutons
  • Shrimp grilled lemon pepper
  • avocado caesar dressing one batch
  • 1 avocado sliced

Instructions

  1. Roast your sweet potato croutons and grill the lemon pepper shrimp.
  2. Add chopped kale to a big bowl. Drizzle ½ of the avocado caesar dressing over kale and toss. Taste and add more dressing, if desired (I like the kale well-coated so I use the whole batch of dressing).
  3. To serve, add dressed kale into serving bowls and top with sweet potato croutons, grilled shrimp and avocado slices.
