Ingredients
Ingredients for Cafe Rio CopyCat Beans:
- 2 tablespoons olive oil
- 2 cloves garlic, minced, about 2 teaspoons
- 1 teaspoon ground cumin
- 1 (10-ounce) can black beans, rinsed and drained
- 1 ⅓ cups tomato juice
- ½ teaspoon salt
- 2 tablespoons fresh chopped cilantro
Ingredients for Tortilla Strips
- 10-12 corn tortillas
- oil for frying
- kosher salt, to taste

Instructions
Black Beans
- Heat the olive oil in a skillet over medium-high heat, add in the garlic and cumin and cook for just a minute, until it is fragrant.
- To the skillet add the beans, tomato juice, and salt. cook everything together, stirring continually, until it is all heated through.
- Top with cilantro to serve.
Tortilla Strips
- Heat the frying oil in a large frying pan over medium-high heat. Using a pizza cutter, cut the tortillas into ½ by 2-inch strips and set aside.
- carefully drop the cut tortilla strips into the hot oil and fry them until thye are crispy and golden brown.
- Remove the fried tortilla strips from the hot oil with a slotted spoon, place them on a paper towel lined plate and season with salt.
