Ingredients
- 1 pound Shrimp peeled and deveined, large
- 14 ounce pork sausage sliced, or chicken sausage
- 1 zucchini sliced, medium-sized
- 1 yellow squash sliced, medium-sized
- ½ asparagus sliced into thirds, bunch
- 1 red bell pepper chopped into chunks
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- salt to taste
- black pepper to taste
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Add 1 pound large shrimp, 14 ounce pork or chicken sausage, 1 medium-sized zucchini, 1 medium-sized yellow squash, ½ bunch asparagus, and 1 red bell pepper, in a large bowl.
- Add 2 tablespoons olive oil and 2 tablespoons Cajun seasoning and toss until coated evenly.
- Spread the shrimp, sausage, and veggies evenly onto a sheet pan.
- Bake in the preheated oven for 15-20 minutes or until shrimp is pink and vegetables are tender.
