Ingredients

  • 1 pound large peeled and deveined shrimp
  • 14 ounces sliced pork or chicken sausage
  • 2 ½ cups sliced zucchini about 2 medium zucchini
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 3 tablespoons Cajun Seasoning

  1. Preheat the grill to medium-high heat and lightly spray the grates with nonstick cooking spray.
  2. Add 1 pound large peeled and deveined shrimp, 14 ounces sliced pork or chicken sausage, 2 ½ cups sliced zucchini, 1 red bell pepper cut into 1-inch pieces, 1 yellow bell pepper cut into 1-inch pieces, ½ teaspoon salt, ¼ teaspoon ground black pepper, 3 tablespoons olive oil, and 3 tablespoons Cajun Seasoning to a large bowl and toss until everything is evenly coated in the seasoning.
  3. Thread the shrimp, sausage, and vegetables equally onto metal skewers.
  4. Grill the skewers on each side for 2-3 minutes until the shrimp is opaque and veggies are tender. Serve immediately.
