Cajun Shrimp and Sausage

This quick Cajun Shrimp and Sausage dinner has plump shrimp, turkey sausage, lots of fresh veggies all tossed in a cajun seasoning blend made in one pan!

Ingredients

  • 1 lb medium shrimp shelled and deveined
  • 1 lb turkey sausage sliced
  • 3 zucchini sliced half inch pieces
  • 2 red peppers chopped into 1 inch pieces
  • 1 large red onion sliced
  • 2 tbsp olive oil
  • 2 tbsp Cajun Seafood Seasoning
  • 1 tsp fennel seeds optional

Instructions

  1. Preheat oven to 400°F and line a baking sheet with aluminum foil or parchment paper.
  2. Slice the turkey sausage into half inch pieces. Thaw shrimp if frozen. Shell and devein the shrimp, keeping tails on. Cut the vegetables and place all in a bowl.
  3. Drizzle with olive oil and Cajun Seafood Seasoning. Toss to coat.
  4. Spread on the lined baking sheet and bake for 18-20 minutes total.
  5. Garnish with chopped parsley and serve as is or over pasta if you prefer.
