Cajun Sweet Potato Fries Recipe
These Cajun sweet potato fries are covered in tasty Cajun spices that are smoky and a little spicy and baked to perfection. Then, as if they're not good enough, they're served with an easy-to-make blue cheese dip. This is heaven, we're sure of it!

Ingredients
- 2 2 medium sweet potatoes cut into ¼-inch strips
- 2 2 tablespoons olive oil
- 1 ½ 1 ½ tablespoons Cajun Seasoning
- chopped parsley to serve
Blue Cheese Yogurt
- ⅓ ⅓ cup Greek yogurt
- ¼ ¼ cup blue cheese crumbled
- 1 1 teaspoon Dijon mustard
- 1 1 pinch each: salt and pepper
Instructions
- Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Place the sweet potato strips in a large bowl, add the olive oil and Cajun seasoning, and mix well.
- Arrange the fries on the baking sheet so that they are in a single layer and not touching each other. Bake in the oven for 25-30 minutes, until they are soft with several crispy spots.
- While the fries are in the oven, make the blue cheese yogurt. In a small bowl mix together the yogurt, blue cheese, dijon, salt, and pepper.
- Serve the fries with a little chopped parsley on top and the blue cheese yogurt on the side.

Notes
- Cajun Seasoning
- If you don't have Cajun seasoning in your pantry, you can make your own! This is a half portion of our Cajun seasoning recipe and will make 6 tablespoons. You can use the rest on chicken, salmon, potatoes, or roast veggies!
- 1 ½ tablespoons paprika
- 1 tablespoon EACH: onion powder and garlic powder
- ½ tablespoon EACH: thyme, oregano, salt, pepper, and cayenne
