Cake Mix Muffins

Easy and foolproof, these Cake Mix Muffins are perfect for easy mornings. You only need a few ingredients and very little prep time to get these delicious muffins on the table.

Ingredients

  • 1 (13.25 oz) cake mix dry
  • 1 (3.4 oz to 3.9 oz) package instant pudding mix dry
  • 7 tablespoons flour
  • 1 teaspoon baking powder
  • 3 whole eggs plus 1 egg yolk
  • 2/3 cup milk
  • 1/3 cup oil

  1. Preheat the oven to 400ºF. Prepare 16 muffin cups by lining with paper liners or spraying with nonstick cooking spray.
  2. In a large bowl, mix together the cake mix, pudding mix, flour, and baking powder.
  3. Make a well in the center of the dry ingredients and add the eggs, egg yolk, milk, and oil.
  4. Mix everything together until fully mixed.
  5. Divide the batter evenly between the prepared muffin cups.
  6. Bake the muffins until cooked through, about 15 minutes.

Notes

  • I have also tested this recipe using the larger 15.25 oz cake mix. If using the larger mix, cut the flour down to 4 tablespoons.
  • Any flavor of cake mix/pudding mix can be used, but the texture and appearance does differ slightly between flavors.
