Ingredients

  • 8 oz rotini pasta or pasta of choice, cooked per instructions
  • cherry tomato sliced in half, handful
  • 1 cucumber seeded & diced, large
  • ¼ onion diced, sweet yellow
  • 1 bell pepper diced, orange
  • feta cheese
  • basil chopped, fresh

  • salt sea salt and fresh cracked, to taste
  • black pepper sea salt and fresh cracked, to taste

Instructions

  1. Make the vinaigrette--click link for the recipe.
  2. Cook pasta in a large pot of salted water, per package instructions, drain, and cool completely.
  3. Once the pasta has cooled completely, add the cherry tomato halves, cucumber, onion, bell pepper, feta cheese, and basil then mix thoroughly.
  4. Slowly add the vinaigrette and toss to coat evenly. Season with salt and pepper, to taste. Taste and add more dressing as needed.
