Candy Cane Peppermint Cookies

Ingredients

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup Crushed candy canes about 8
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350 F.
  2. In a mixer combine the butter with the white and brown sugar at high speed until pale and fluffy.
  3. Add the egg and vanilla and mix until well combined.
  4. In a small bowl mix the flour, salt and baking soda. Add to the mixer on low speed and mix until combined.
  5. Stir in the chocolate chips and crushed candy canes.
  6. Scoop the cookies into balls about 1 inch round and roll until nicely round. Place on a cookie sheet covered with parchment paper or a silcone mat.
  7. Baking for 10 minutes until the cookies are brown on the edges.
  8. Leave the cookies on the baking sheets until cool.
