Caprese Avocado Toast

Ingredients

  • 2 ripe avocados
  • 2 teaspoons fresh lime juice
  • sea salt to taste
  • 4 lices whole-grain bread
  • 4 ounces mozzarella balls halved
  • 1 cup cup cherry tomatoes halved
  • 1/4 cup cup basil leaves coarsely chopped
  • Balsamic glaze for drizzling

Instructions

  1. Toast bread until golden brown.
  2. In a bowl, mash avocados with lime juice and season with salt.
  3. Layer toast with mashed avocado, cut slices of toast in half, place cherry tomatoes, mozzarella, basil and drizzle with balsamic glaze before serving.
