Caprese Chicken

Ingredients

  • 4 chicken breast , halveed, boneless, skinless
  • 2 tablespoons vegetable oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 2 plum tomatoes , sliced
  • 6 fresh basil leaves , thinly sliced
  • 4 lices mozzarella cheese
  • 1/2 cup balsamic glaze

Instructions

  1. Preheat oven to 400 degrees.
  2. Place chicken in an ungreased 9x13 baking pan.
  3. Brush chicken with oil and sprinkle with salt and pepper.
  4. Top with tomatoes and basil.
  5. Bake, uncovered, for 15-20 minutes until chicken is cooked through.
  6. Add cheese on top and bake for an additional 5 minutes or until melted.
  7. Drizzle with balsamic glaze just before serving.
