Ingredients
- (2) pkgs. Boursin cheese (Garlic and Herb)
- 4 to 6 Ripe Tomatoes, deseeded (preferably roma, grape, or campari)
- 2 to 3 Tablespoons extra-virgin olive oil
- 1 to 2 Tablespoons balsamic glaze (to taste, start with 1 Tablespoon)
- 2 garlic cloves, minced
- 8 to 10 basil leaves (chopped)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- French Baguette or Crackers (toasted)
Instructions
- Chop the tomatoes into small pieces. I suggest deseeding the tomatoes. Remove any extra juice, if desired.
- Mix the chopped tomatoes, garlic, and basil in a separate bowl. Add the extra virgin olive oil, balsamic glaze, a pinch of salt, and a dash of pepper. Stir gently to combine.
- Spread the Boursin cheese evenly on the bottom of a shallow bowl or plate. A small, flat dish or a shallow bowl works best, as it allows for even distribution of the tomato mixture on top.
- Spoon the tomato mixture over the Boursin cheese layer, spreading it out evenly.
- Drizzle with extra balsamic glaze over the top, if desired.
- Serve with toasted French baguette or crackers. Use it as a spread more than a dip. Serve with knives for spreading.
Cup of Yum
Toasting Baguette:
- Brush each slice of baguette lightly with olive oil or butter. Bake in a 375 degree oven for 6-8 minutes or until they are lightly toasted.
- Store covered in the refrigerator until ready to serve.

Notes
- I was inspired to make this recipe by Lex Nicoleta on TikTok. She is the queen of the "Coastal Grandmother" aesthetic.
- Can I make this caprese dip ahead of time?
- Yes! You can prepare the tomato mixture and Boursin cheese layer separately up to a few hours in advance. Assemble the dip just before serving to keep the ingredients fresh.
