Caprese Dip with Boursin Cheese

This quick and easy appetizer is made with garlic and herb Boursin cheese and topped with a fresh caprese salad made with tomatoes, olive oil, balsamic glaze, basil, and garlic. This Caprese Dip with boursin cheese pairs perfectly with crostinis or crackers.

Ingredients

  • (2) pkgs. Boursin cheese (Garlic and Herb)
  • 4 to 6 Ripe Tomatoes, deseeded (preferably roma, grape, or campari)
  • 2 to 3 Tablespoons extra-virgin olive oil
  • 1 to 2 Tablespoons balsamic glaze (to taste, start with 1 Tablespoon)
  • 2 garlic cloves, minced
  • 8 to 10 basil leaves (chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • French Baguette or Crackers (toasted)

Instructions

  1. Chop the tomatoes into small pieces. I suggest deseeding the tomatoes. Remove any extra juice, if desired.
  2. Mix the chopped tomatoes, garlic, and basil in a separate bowl. Add the extra virgin olive oil, balsamic glaze, a pinch of salt, and a dash of pepper. Stir gently to combine.
  3. Spread the Boursin cheese evenly on the bottom of a shallow bowl or plate. A small, flat dish or a shallow bowl works best, as it allows for even distribution of the tomato mixture on top.
  4. Spoon the tomato mixture over the Boursin cheese layer, spreading it out evenly.
  5. Drizzle with extra balsamic glaze over the top, if desired.
  6. Serve with toasted French baguette or crackers. Use it as a spread more than a dip. Serve with knives for spreading.

Toasting Baguette:

  1. Brush each slice of baguette lightly with olive oil or butter. Bake in a 375 degree oven for 6-8 minutes or until they are lightly toasted.
  2. Store covered in the refrigerator until ready to serve.

  • Can I make this caprese dip ahead of time?
  • Yes! You can prepare the tomato mixture and Boursin cheese layer separately up to a few hours in advance. Assemble the dip just before serving to keep the ingredients fresh.
