Caprese Orzo Salad (Basil Tomato Mozzarella)

An easy side, this Caprese Orzo Salad combines tomatoes, fresh mozzarella and basil with a yummy homemade balsamic vinaigrette. Make ahead!

Ingredients

DRESSING
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 1 tablespoon honey
  • 1 clove garlic minced
  • salt & pepper
SALAD
  • 10 ounces orzo pasta
  • 1 cup fresh mozzarella bocconcini pearls if you can find them, drained
  • 10 ounces grape tomatoes (or cherry tomatoes) halved
  • ½ cup fresh basil chopped

Instructions

DRESSING
    Cup of Yum
  1. In a small bowl, whisk together the balsamic vinegar, olive oil, honey and garlic. Season with salt and pepper.
SALAD
  1. Cook orzo according to directions, drain and rinse with cold water. Set aside to cool.
  2. Mix the cooled orzo, mozzarella, tomatoes and basil in a large bowl.
  3. Pour dressing over salad and mix well.
  4. Season with salt and pepper if needed.
  5. Devour.
