Caramel Apple Butter

This Caramel Apple Butter is a balanced blend of sweet and earthy flavors and made with unpeeled apples, salted caramel and cachaça. Cooked on the stovetop in under an hour, the cachaça adds grassy, almost earthy notes that cut through the sweetness, while the apple skins give it a vibrant peachy-pink hue. Ingredients

  • 10 cups of diced apples, skin on, cores removed from about 3lbs/1.3kg of whole apples
  • 1 whole cinnamon stick
  • 1 teaspoon of ground cinnamon
  • a pinch of nutmeg
  • 1 whole allspice or 1/8 of a teaspoon
  • 2 whole cloves or 1/8 of a teaspoon
  • 1/2 cup 100% apple juice, unsweetened
  • 1/2 cup cachaca + 1 tablespoon
For the Caramel
  • 1 cup of water
  • 1 cup of sugar
  • 2 tablespoons of butter, unsalted
  • 2 tablespoons of heavy cream
  • 1/2 teaspoon of kosher salt

Instructions

  1. Core and dice the apples. Place them in a large Dutch oven with the cinnamon stick, apple juice, and cachaça. Stir to coat the apples evenly.
  2. Cover the pan and bring the mixture to a boil over high heat.
  3. Once boiling, reduce the heat to a simmer and cook, covered, for 20-30 minutes, or until the apples are soft and tender.
  4. Meanwhile, make the caramel. Add the water and sugar to a saucepan and bring it to a boil. The water will cook off, and the sugar will begin to cook and caramelize. After 15-20 minutes, when the mixture turns a light golden color, turn off the heat and quickly whisk in the butter, salt, and cream.
  5. When the apples are soft, transfer them, along with the cooking liquid, to a blender and puree until smooth. Add the spices and blend again until fully combined.
  6. Pour the caramel into the blender with the apple mixture and blend until everything is combined. Add the final tablespoon of cachaça and blend one last time.
  7. Pour the apple butter into mason jars or storage containers and let it cool completely before sealing the containers.
  8. Serve with cheese, bread, or use it to create drinks and cocktails!
