Ingredients

Graham Cracker Crust:
  • 3 cups Graham cracker crumbs , (24 full crackers)
  • 1/2 cup sugar
  • 12 tablespoons unsalted butter , melted
Cheesecake Filling:
  • 24 ounces cream cheese , softened (3 blocks)
  • 3/4 cup sugar
  • 3 large eggs
  • 1/3 cup sour cream
  • 2 teaspoon vanilla extract
  • 3 Granny Smith apples , peeled and chopped
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
Oat Topping:
  • 1 cup flour
  • 1/2 cup brown sugar
  • 3/4 cup quick cooking oats
  • 1/2 cup butter
Caramel Topping:
  • 1/2 cup heavy cream  , at room temperature
  • 1 cup caramels , unwrapped

Instructions

  1. Preheat oven to 325 degrees and spray a 9x13 baking dish with baking spray.
  2. Mix the graham cracker crumbs, sugar, and melted butter together then press it into the baking dish in an even layer.
  3. To your stand mixer add the cream cheese and sugar on high speed until light and fluffy.
  4. Lower the speed to medium and add in the eggs, sour cream, and vanilla until smooth.
  5. Carefully spread the mixture on the crust.
  6. Mix apples, cinnamon, and nutmeg and spoon over the cheesecake filling.
  7. Add flour, brown sugar, quick oats, and diced butter to a bowl and mash it together.
  8. Sprinkle mixture over apples.
  9. Bake for 50-55 minutes, or until set and firm.
  10. Add caramels and heavy cream to a microwave-safe bowl and melt on 50% power in 30-second increments until smooth and creamy.
  11. Drizzle over the bars.
  12. Chill completely before serving.
