Ingredients
Graham Cracker Crust:
- 3 cups Graham cracker crumbs , (24 full crackers)
- 1/2 cup sugar
- 12 tablespoons unsalted butter , melted
Cheesecake Filling:
- 24 ounces cream cheese , softened (3 blocks)
- 3/4 cup sugar
- 3 large eggs
- 1/3 cup sour cream
- 2 teaspoon vanilla extract
- 3 Granny Smith apples , peeled and chopped
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Oat Topping:
- 1 cup flour
- 1/2 cup brown sugar
- 3/4 cup quick cooking oats
- 1/2 cup butter
Caramel Topping:
- 1/2 cup heavy cream , at room temperature
- 1 cup caramels , unwrapped

Instructions
- Preheat oven to 325 degrees and spray a 9x13 baking dish with baking spray.
- Mix the graham cracker crumbs, sugar, and melted butter together then press it into the baking dish in an even layer.
- To your stand mixer add the cream cheese and sugar on high speed until light and fluffy.
- Lower the speed to medium and add in the eggs, sour cream, and vanilla until smooth.
- Carefully spread the mixture on the crust.
- Mix apples, cinnamon, and nutmeg and spoon over the cheesecake filling.
- Add flour, brown sugar, quick oats, and diced butter to a bowl and mash it together.
- Sprinkle mixture over apples.
- Bake for 50-55 minutes, or until set and firm.
- Add caramels and heavy cream to a microwave-safe bowl and melt on 50% power in 30-second increments until smooth and creamy.
- Drizzle over the bars.
- Chill completely before serving.
