Caramel Apple Empanadas

These Caramel Apple Empanadas are the ultimate Fall treat! Fresh apples, cinnamon-sugar, and caramel are all wrapped up in a flaky pie crust for a totally indulgent dessert.

Ingredients

  • 1 large granny smith apples peeled and cut into 8 wedges
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1 premade pie crusts
  • 8 caramels unwrapped
  • 1 egg yolk + 1 teaspoon water beaten for eggwash
  • 2-3 tablespoons turbinado sugar
  • Caramel sauce for drizzling optional

Instructions

  1. Preheat oven to 400 F, line a baking sheet with parchment and set aside
  2. Toss the apple wedges with the brown sugar, cinnamon, and lemon juice; set aside
  3. Cut the pie crust into 8 equal circles, place onto the baking sheet
  4. Add one piece of apple and top with one caramel to each pie dough circle
  5. Brush the edges with eggwash and fold the dough over the apple filling , use a fork to crimp shut
  6. Brush the outside with eggwash and sprinkle with turbinado sugar; use a fork to prick venting holes on top
  7. Bake in preheated oven 20 minutes, or until golden brown
  8. Remove from oven, allow to cool at least 5 minutes then drizzle with caramel sauce if desired
