Ingredients
- 2 tablespoons unsalted butter
- 3 large Golden Delicious apples cored and thinly sliced
- 2 tablespoons packed brown sugar
- ¼ teaspoon ground cloves
- 2 tablespoons apricot preserves
- 24 ounces nonfat plain Greek yogurt
- 1 ⅓ cup granola your favorite kind
Instructions
- Heat a medium nonstick skillet over medium-high heat. Add butter and melt. Stir in apples and brown sugar and cook, stirring frequently, for 5 minutes.
- Add ground cloves and cook about 5 more minutes, stirring frequently, until the apples are golden brown and soft. Watch closely so that the apples do not burn. Stir in apricot preserves and let melt into apples. Scrape apples into a bowl and cool slightly. The apples can be made a day in advance. Store, covered, in the refrigerator.
- Using four 8-ounce glasses, layer Greek yogurt, apples, and granola in any way you desire, ending with apples on top. Garnish with a dollop of yogurt and granola.
