Caramelized Pineapple Grilled Cheese
Pineapple, onions, and jalapeno are sauteed in coconut oil and sandwiched between gooey fontina and bread for a grilled cheese sandwich that'll rock your world!
Ingredients
- 3 tablespoons coconut oil
- 1 medium pineapple peeled, cored, and sliced thin, fresh
- 1 medium white onion sliced
- 1 medium jalapeño diced
- 1/4 teaspoon salt
- 12 lices bread
- 2 cups fontina cheese shredded
Instructions
- Melt 1 tablespoon coconut oil in a large heavy skillet over medium high heat. Add in the pineapple, onion slices, jalapeno, and season with salt. Saute until onions are soft and translucent, about 7 to 10 minutes.
- Spread remaining coconut oil on one side of each slice of bread, about 1/2 teaspoon per slice of bread.
- Create the sandwiches by sandwiching the non-oiled side of bread with a little cheese, a heap of the pineapple/onion mixture, more cheese.
