  • 8 ounces penne pasta
  • 1/4 cup olive oil
  • 8 shallots, thinly sliced
  • 5 garlic cloves, thinly sliced
  • 1 teaspoon kosher salt, plus more for salting water
  • 2 tablespoons balsamic vinegar
  • 3/4 cup grated gruyere cheese
  • pepper, to taste

Instructions

    Cup of Yum
  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook according to package instructions, about 10 minutes. Drain, reserving 1/2 cup pasta water, and set aside.
  2. Meanwhile, in a large saute pan, add the olive oil and shallots. Saute on low for 15 mins, adding salt about 5 minutes in. Saute until shallots become soft and caramelized.

  5. Serve.
