Ingredients

  • 2 tablespoons vegetable oil
  • 2 yellow onions , diced
  • 2 garlic cloves , minced
  • 1 tablespoon fresh ginger , minced
  • 8 cups vegetable broth
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 tablespoon Coriander
  • 2 teaspoons Turmeric
  • 1 teaspoon dried thyme
  • 1/4 teaspoon ground allspice
  • 2 cups sweet potato , peeled and diced
  • 1 bunch kale , cored and thinly sliced
  • 10 ounces frozen okra , sliced
  • 1 cup canned black-eyed peas , rinsed and drained
  • 14 ounces canned diced tomatoes , drained
  • 10 ounces coconut milk
  • 1 lime , juiced and zested
  • 1/2 cup green onions , thinly sliced

Instructions

  1. Add vegetable oil to a large pot on medium heat.
  2. Add in the onions, garlic, and ginger and cook until translucent, stirring occasionally, for 6-8 minutes.
  3. Add in the broth, salt, pepper, coriander, turmeric, thyme, allspice, sweet potato, kale, okra, black-eyed peas, and diced tomatoes, stirring well until combined.
  4. Bring to a simmer and cook for 15 minutes, uncovered.
  5. Add in coconut milk and lime juice and stir.
  6. Bring to a simmer, then remove from heat.
  7. Stir in lime zest and green onions before serving.
