Carne Asada Street Tacos

Ingredients

  • cooking spray
  • 1 package Trader Joe’s Carne Asada Seasoned Beef
  • 2 limes
  • 8 Trader Joe’s Carb Savvy Whole Wheat Tortillas
  • ½ cup frozen corn
  • ½ red pepper
  • ¼ cup white onion
  • ¼ cup fresh cilantro
  • zest of 1 lime
  • ½ cup Trader Joe’s lite Mexican cheese mix
  • ½ avocado
  • 1 cup shredded lettuce
For the coconut lime crema
  • ½ cup Two Good coconut yogurt
  • 2 tsp Sriracha
  • ¼ cup fresh lime juice
  • 1 tablespoon light Mayo
  • 1 tsp chile lime seasoning
  • 2 tablespoons cilantro
For garnish
  • lettuce

Instructions

  1. Heat a skillet to medium heat and spray with cooking spray. Dice the carne asada and put it into the pan. Then, squeeze out the juice of two limes over the meat.
  2. While the beef is heating up, wash and dice your bell pepper, onion, and cilantro. I love to use a pizza cutter to dice fresh herbs. It's so easy!
  3. In another skillet, add your frozen corn, peppers, and onion. Sautee until corn is warmed. Then, add fresh cilantro. This is going to be our corn salsa. Do not over cook the vegetables. They should be crunchy.
  4. Next, let’s make the crema. In a small mixing bowl, add yogurt, sriracha, lime juice, mayo, and chile lime seasoning. Add fresh cilantro to taste. Then, mix together until a crema texture is achieved.
  5. Prior to assembling the street tacos, slice avocado and warm tortillas. Heat on a gas stove / open flame for a few minutes on each side, or on a skillet. You can also microwave them, but keep in mind you will not achieve the charred flavor. I broil them in the oven on a wire rack.
  6. Then, add the cheese to the warm tortillas.
  7. Spread the crema on the tortillas, add carne asada, fresh salsa, and any other toppings you like.
  8. Serve fresh and enjoy!

Notes

  • Beef tips:
  • Tacos are best served al la carte. Store the cooked meat and vegetables separately in airtight containers in the refrigerator. Reheat in the microwave or on a skillet. The ingredients will last up to 5 days in the refrigerator.
  • Be sure to cut your steak against the grain. Otherwise, it will be tough.
  • Do not overcook the meat! Quick sear on both sides will get the job done.
