Ingredients

  • ¾ cup rolled oats old fashioned, gluten-free
  • cinnamon dash
  • ground ginger dash
  • 1/2 teaspoon vanilla extract pure
  • ¼ cup carrot shredded
  • 1 tablespoon pure maple syrup to taste*
  • 1 tablespoon craisins or raisins
  • 1 tablespoon walnuts chopped
  • 1 tablespoon applesauce optional
  • ½ cup water boiling hot
  • ¼ cup coconut milk plus more for serving, full-fat, canned
  • 1/4 teaspoon orange zest optional

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Add all ingredients for the baked oatmeal to a ramekin or oven-safe bowl and stir well. Bake in the preheated oven for 12 minutes. Remove ramekin from the oven, allow it to cool enough to touch, about 5 to 10 minutes and serve for breakfast with additional coconut milk or almond milk.

Notes

  • *You can use honey if not vegan, or agave, coconut palm nectar, or brown sugar
