- ¾ cup rolled oats old fashioned, gluten-free
- cinnamon dash
- ground ginger dash
- 1/2 teaspoon vanilla extract pure
- ¼ cup carrot shredded
- 1 tablespoon pure maple syrup to taste*
- 1 tablespoon craisins or raisins
- 1 tablespoon walnuts chopped
- 1 tablespoon applesauce optional
- ½ cup water boiling hot
- ¼ cup coconut milk plus more for serving, full-fat, canned
- 1/4 teaspoon orange zest optional
Instructions
- Preheat the oven to 350 degrees F.
- Add all ingredients for the baked oatmeal to a ramekin or oven-safe bowl and stir well. Bake in the preheated oven for 12 minutes. Remove ramekin from the oven, allow it to cool enough to touch, about 5 to 10 minutes and serve for breakfast with additional coconut milk or almond milk.
