Ingredients

  • 4 large eggs , room temperature
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups carrots , shredded
  • 3/4 cup walnuts , chopped
  • 16 ounces cream cheese , softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup sugar

Instructions

  1. Preheat oven to 350 degrees and spray a 13x9 baking pan with baking spray.
  2. In a large bowl, whisk together the eggs, oil and sugar until smooth.
  3. Sift the flour, baking soda, baking powder, cinnamon and salt.
  4. Add the dry mixture to the wet mixture and whisk until just combined.
  5. Fold in the carrots and walnuts.
  6. Whisk together the cream cheese, eggs, vanilla and sugar until smooth.
  7. Pour the carrot cake into your baking pan.
  8. Spoon the cheesecake mixture over the top gently.
  9. Swirl gently with a butter knife.
  10. Bake for 40-45 minutes until a toothpick comes out clean.
  11. Cool on a wire rack.
