Ingredients

Dough:
  • 1 cup milk
  • 2 1/4 teaspoons active dry yeast
  • 1/3 teaspoon granulated sugar
  • 4-4 1/4 cups all-purpose flour
  • 6 tablespoons light brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs room temperature
  • 1 1/2 teaspoon vanilla extract
  • 1/4 cup unsalted butter melted
  • 1 cup carrots finely shredded - about 2 carrots
Filling:
  • 6 tablespoons unsalted butter softened
  • 1 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup raisins
Icing:
  • 8 oz cream cheese softened to room temperature
  • 1/2 cup unsalted butter softened
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 6 tablespoons milk
  • 1/2 teaspoon ground cinnamon optional

Instructions

Dough:

  1. Add the milk to a microwave-safe cup and heat it to 115°F, or you can add it to a small saucepan and heat it on the stove. Dissolve the yeast and granulated sugar in warm milk, and stir to combine. Allow the mixture to proof for 5-10 minutes. The mixture should be foamy, if it's not, redo this step.
  2. Next, in a bowl, stir the vanilla into melted butter.
  3. After that, in the bowl of a stand mixer, using the dough hook, combine 4 cups of flour, light brown sugar, salt, cinnamon, and nutmeg.
  4. With the mixer running on low, slowly add the yeast mixture.
  5. After that, add the butter mixture.
  6. Next, beat in the eggs one at a time.
  7. Add the finely shredded carrots and increase speed, mixing until the dough comes together. If the dough is still sticky, add additional flour, one tablespoon at a time until the dough comes together in a smooth ball.
  8. Transfer dough to a large oil-greased bowl. Cover it with a clean kitchen towel, and allow it to rise in a warm place for at least one hour or until doubled in size.
Filling and rolling the dough:
  1. Lightly grease a 9x13-inch baking pan with butter or baking spray.
  2. In a medium bowl, combine the brown sugar and cinnamon. Set aside.
  3. On a clean counter, roll out the proofed dough into a 12-20-inch rectangle.
  4. Brush the entire surface with melted butter and sprinkle with brown sugar and cinnamon mixture, 1 inch from the sides.
  5. After that, sprinkle the raisins on top, distributing them evenly.
  6. Starting at one of the short ends, begin rolling the dough into a log. Pinch to seal ends. Using a sharp knife, carefully slice the dough log into the desired number of rolls, I got 9 large rolls. Arrange them in the prepared pan. Cover loosely and allow to rise in a warm place for an additional one hour.
Bake:
  1. Preheat oven to 350°F.
  2. Bake the rolls for 30-40 minutes or until the internal temperature reaches at least 200°F.
  3. Remove from the oven and let rolls cool for 20-30 minutes before adding icing.
Cream cheese icing:
  1. In a large bowl or stand mixer, beat together cream cheese and butter until light and fluffy.
  2. Add the vanilla, cinnamon (if using), and powdered sugar. Stop to scrape the sides and bottom of the bowl.
  3. Add in milk, one tablespoon at a time, until desired consistency is reached.
  4. Spread the icing over the rolls and serve.
