Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/3 cup vegetable oil or canola oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/4 cup crushed pineapple drained
- 1 carrot grated (about 1/3 to 1/2 cup)
- 1/2 cup white chocolate chips or more as desired
Instructions
- Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.
- In a large mixing bowl, add the flour, sugar, baking powder, salt, cinnamon, nutmeg, and ginger. Whisk until combined.
- Add the oil, eggs, and vanilla to the dry ingredients. Beat with a hand mixer for 2 minutes until well combined. Scrape down the sides and bottom of the bowl to avoid patches of dry ingredients.
- Stir in the pineapple, grated carrot, and white chocolate chips.
- Use a 1 Tablespoon cookie scoop, drop the batter onto your prepared cookie sheets about 2 inches apart.
- Bake for 8-12 minutes, until the cookies are cracked on top and edges are golden brown.
- Cool on the cookie sheets for 2 minutes before transferring to the cooling racks to cool completely.
