Ingredients

  • 1/3 cup rolled oats
  • 3 tbsp whey protein powder Cellucor Cinnamon Swirl flavor
  • 1/2 tbsp almond flour
  • 1/4 tsp cinnamon
  • 1/8 tsp baking powder
  • nutmeg pinch
  • 1/4 cup carrot shredded
  • 1 tbsp raisins chopped
  • 1 egg white
  • 2 tbsp applesauce unsweetened
  • 1 1/2 tbsp almond milk unsweetened vanilla
  • 1/4 tsp vanilla extract

Topping Ingredients:

  • 3 tbsp Greek yogurt Dannon Light and Fit vanilla flavor
  • 1 tbsp whey protein powder Cellucor Whipped Vanilla flavor
  • 1 tbsp pancake syrup Walden Farms brand

Instructions

  1. Combine topping ingredients and mix until smooth. Set aside.
  2. In a food processor or Nutribullet, grind the oats into a fine powder. Combine with all other pancake ingredients. Set aside.
  3. Heat a griddle or large non-stick pan over medium-low heat. Drop pancake batter onto griddle and cook until the top starts to bubble, then flip and cook the other side.
  4. Top with Greek yogurt mix and more shredded carrot before serving.
