Ingredients

For the Carrot Cake Rice Krispie Treats:
  • 4 Tablespoons butter
  • 10 oz mini marshmallows 1 typical bag
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 6 Cups puffed rice cereal such as Rice Krispies
  • ¼ Cup carrots grated
For the Cream Cheese Icing:
  • 2 oz cream cheese softened
  • 1 Tablespoons butter softened, but not melted
  • 1 Cup powdered sugar
  • ¼ teaspoon vanilla
  • 1/3 Cup white chocolate chips

Instructions

To Make the Carrot Cake Rice Krispie Treats

  1. Line a 9x13 inch baking pan with parchment paper and set aside.
  2. Combine butter and marshmallows in a large saucepan over medium-low heat. Stir until the mixture is melted and smooth.
  3. Remove pan from heat and stir in cinnamon, nutmeg, grated carrots and rice cereal.
  4. Scoop the mixture into your prepared pan and gently press down to evenly fill the pan.
  5. Allow to cool completely before cutting.
To Make the Cream Cheese Icing
  1. Cream together softened butter and cream cheese with an electric mixer. Beat in vanilla and powdered sugar until fully incorporated.
  2. Melt the white chocolate chips in a microwave-safe bowl. Heat in 20-30 second increments, stirring between, until melted and smooth.
  3. Pour the melted white chocolate into the bowl of cream cheese mixture and beat until combined.
  4. Scoop the icing into a piping bag and drizzle across the full pan of treats, or on individual pieces if you've already cut them.
