Carrot Parsnip Mash
Carrot Parsnip Mash combines tender boiled carrots and parsnips, blended smoothly with butter and seasoning. The result is a creamy, subtly sweet side dish with gentle earthy notes from the parsnips. This mash offers a comforting texture that complements roasted or grilled meats and vegetables. Its simple preparation involves boiling until soft and mashing to desired consistency, making it a practical choice for a nutritious vegetable accompaniment.
Ingredients
- 1 pound carrot
- 1 pound parsnip
- 2 tbsp butter melted, or ghee
- salt
- black pepper
Instructions
- Heat a large pot of water on high, until boiling.
- While waiting for the water to boil, peel the carrots and parsnips. Then slice into 1 inch-sized pieces.
- Once the water is boiling, add the sliced carrots and parsnips. Reduce heat to medium-low, cover, and simmer for 25-30 minutes or until tender.
- Strain the carrots and parsnips in a colander.
- Place into a food processor with the ghee, salt and pepper. Pulse a few times, until they are mashed to your preference. Alternatively, you can mash the ingredients together with a hand masher.
