Carrot Salad with Cilantro and Cinnamon

Ingredients

  • 2 Tablespoons olive oil
  • 2 Tablespoons lemon juice I used Meyer lemons, freshly squeezed
  • 1 clove garlic minced
  • 3/4 teaspoon ground coriander
  • 1/8 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/2 jalapeno pepper seeded and very thinly sliced, fresh
  • 1/2 teaspoon kosher salt
  • 2 1/2 cups carrot grated
  • 1/2 cup cilantro fresh

Instructions

    Cup of Yum
  1. Whisk together the olive oil, lemon juice, garlic, coriander, cinnamon, paprika, jalepeno, and salt.
  2. Toss the dressing with grated carrots and cilantro.
  3. Serve at once.

Notes

  • This salad can be made one day in advance. Ashley recommends adding the cilantro just before serving.
