Ingredients

  • 1/3 cup mayonnaise
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon kosher salt
  • 1 pound carrots , peeled and shredded (about 4 cups)
  • 1/2 cup raisins
  • 1/2 cup golden raisins

Instructions

  1. Add mayonnaise, sugar, lemon juice and salt to a large bowl and whisk together until creamy.
  2. Add in the carrots and both kinds of raisins.
  3. Stir well to combine.
  4. Refrigerate 1 hour before serving.
