This Carrot Salad with Raisins is the perfect combination of creamy, sweet, and earthy in one bite. It's sure to be a new favorite BBQ side!

Ingredients
- 1/3 cup mayonnaise
- 2 tablespoons sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon kosher salt
- 1 pound carrots , peeled and shredded (about 4 cups)
- 1/2 cup raisins
- 1/2 cup golden raisins
Instructions
- Add mayonnaise, sugar, lemon juice and salt to a large bowl and whisk together until creamy.
- Add in the carrots and both kinds of raisins.
- Stir well to combine.
- Refrigerate 1 hour before serving.
