Carrot Tarator
Carrot Tarator blends sautéed grated carrots and garlic with creamy yogurt and chopped walnuts. Ingredients
- 3 carrot medium
- 1 garlic clove
- 3 walnuts
- 4 tbsp olive oil
- 5 tbsp yogurt
- salt to taste
Instructions
How to make Carrot Tarator
- Grate the carrots and garlic cloves, coarsely chop the walnuts.
- Heat the olive oil in a large pan. Add the grated carrots and garlic and sauté for 5 minutes until the carrots soften. Let it cool.
- In a separate bowl, whip the yogurt with salt.
- Add the cooked garlic and cooled carrots and chopped walnuts and mix well.
- Transfer to a serving plate and drizzle with olive oil.

- Use a food processor grater to save time and effort on grating the carrots and garlic.
- Sauté the garlic in olive oil before adding the carrots to soften the raw garlic flavor if preferred.
- Mix the yogurt and salt thoroughly to create a smooth base before folding in the carrot mixture.
- Garnish with chopped parsley or dill and extra crushed walnuts for added flavor and texture.
