Carrot Tarator
Description
Carrot Tarator combines grated carrots and garlic cooked gently in olive oil until soft, then cooled and folded into whipped yogurt with a pinch of salt. Chopped walnuts add texture and richness to this creamy, flavorful spread. Cooking the carrots and garlic in oil reduces harshness and enhances their natural sweetness. The walnuts provide a crunchy contrast, enriching the mild yogurt and vegetable base.
The finished dish has a velvety texture with nutty undertones from the walnuts and a mild garlic note. It can be served as a dip, a side salad, or a light accompaniment to bread or grilled dishes. A drizzle of olive oil on top adds richness and a glossy finish.
For ease, use a food processor to grate carrots and garlic. Adjust salt to taste when mixing with the yogurt. Adding herbs like parsley or dill and crushed walnuts on top can complement the flavors if desired.
