Cashew Chicken

Easy Cashew Chicken is tasty, better than take-out Chinese food made at home! Crispy chicken pieces and crunchy cashews stir-fried in a sweet, tangy sauce.

Ingredients

  • 3 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1 pound chicken breast , boneless and skinless, cut into 1 inch pieces
  • 1/2 teaspoon kosher salt
  • 2 tablespoons cornstarch
  • 1/4 cup hoisin sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine , white wine is fine too
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon Sriracha
  • 1 tablespoon sugar
  • 3 cloves garlic , minced
  • 1/2 cup whole cashews

Instructions

  1. Heat a large skillet on medium-high heat and add vegetable oil and sesame oil.
  2. Season chicken with salt, then toss with cornstarch.
  3. Add chicken to pan and cook for 6-8 minutes until chicken is browned on all sides then add in garlic and cook for 30 seconds, stirring well.
  4. In a medium bowl, whisk the hoisin sauce, soy sauce, rice wine, rice wine vinegar, sriracha, and sugar and pour it into the skillet, stirring well.
  5. Cook for 3-4 minutes or until sauce is thickened.
  6. Stir in cashews and serve.
