Cashew Chicken

Homemade cashew chicken is a quick, flavorful takeout favorite you can easily make at home. Tender chicken, crunchy cashews, and colorful veggies come together in a savory sauce, perfect over rice.

Ingredients

For the Sauce
  • 4 tablespoons honey
  • 4 tablespoons soy sauce
  • 2 tablespoons warm water
  • 2 teaspoons sesame oil
  • 2 teaspoons rice vinegar
  • 2 teaspoons Sriracha
For the Chicken Stir Fry
  • 1 ½ pounds boneless skinless chicken breast cut into ½-inch pieces
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup cornstarch
  • 2 tablespoons avocado oil
  • 4 green onions green and white parts chopped
  • 2 garlic cloves minced
  • 1 tablespoon ginger minced
  • 1 red pepper chopped
  • 4 celery stalks chopped
  • 1 cup roasted unsalted cashews
  • rice for serving (optional)

Instructions

  1. To make the sauce, place all the sauce ingredients in a small bowl and whisk to combine. Set aside.
  2. Place chicken, salt and pepper in a medium bowl and stir to coat. Add the cornstarch on top and stir again to combine with the chicken.
  3. Heat the oil In a large wok or skillet over medium-high heat. Add the chicken and stir fry for 6 to 8 minutes, or until crisp and golden brown. Remove the chicken from the skillet and set aside.
  4. To the same skillet, add the green onions, garlic and ginger and cook over medium heat until fragrant, about 3 minutes. Add the red pepper and celery and cook until crisp-tender, about 3 more minutes.
  5. Return the chicken to the skillet along with the cashews and sauce. Stir fry for about 2 minutes, or until everything is well-coated with the sauce.
  6. Serve with rice and more green onions, if desired.

Notes

  • The nutrition label is for the cashew chicken only and does not include rice.
  • Storage: Any leftovers can be kept in an airtight container in the fridge for up to 4 days. To reheat it, you can do so in a skillet over low heat or in the microwave for a few minutes, adding time as necessary.
