Cast Iron Cherry Cobbler

Using fresh cherries, this Cast Iron Cherry Cobbler is packed with flavor and makes quite a tasty dessert! Serve with a scoop of ice-cream and you have the perfect sweet treat!

Ingredients

Cherry Filling
  • 3 cups pitted cherries
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/2 tablespoon almond extract
Topping
  • 1/2 cup flour *all purpose
  • 1/2 cup sugar
  • 1/2 cup butter *cut into small pieces
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 400 degrees (or smoker)
  2. Add cherries to a saucepan and cook over medium heat for about 10 minutes, stirring often.
  3. Add in the sugar, cornstarch, and almond extract.
  4. Turn heat to low and allow to simmer for about 3-5 minutes, or until mixture thickens up slightly.
  5. Remove from heat and pour cherry mixture into a cast iron skillet or baking pan. *I used a 10.25 inch cast iron skillet, an 8x8 baking pan works too
  6. In a medium bowl, make the topping by combining the flour, sugar, cinnamon, and salt.
  7. Cut in the butter using two forks or a pastry blender until a crumbly mixture is formed.
  8. Drop topping evenly on top of the cherry mixture.
  9. Place cast iron skillet into oven or onto smoker and cook for about 30-35 minutes, or until golden brown on top.
  10. Remove from oven/smoker and serve in bowls as is or with a scoop of ice-cream.
