Ingredients

  • 3 bone-in pork chops about 1/2-inch thick
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Chopped fresh parsley for garnish opIonal

Instructions

    Cup of Yum
  1. Preheat the oven to 400°F. Dry pork chops with paper towels. Season both sides of the pork chops with salt and pepper.
  2. In a large cast iron skillet, heat the olive oil over medium-high heat. Add the pork chops and cook for 2-3 minutes on each side, or until golden brown. Remove the pork chops from the skillet and set aside on a plate.
  3. If there is a significant amount of leftover oil in the skillet, carefully pour off most of it, leaving just enough to coat the bottom of the skillet (about 1 tablespoon) to prevent the garlic and herbs from burning.
  4. Reduce the heat to medium and add the butter to the skillet. Once the butter has melted, add the minced garlic, oregano, basil, and thyme. Cook for 1-2 minutes, stirring constantly, until the garlic is fragrant.
  5. Return the pork chops to the skillet, spooning the garlic and herb butter over them to coat evenly. Transfer the skillet to the preheated oven and bake for 3-5 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F).
  6. Remove the skillet from the oven and let the pork chops rest for 5 minutes. Serve the pork chops with the garlic and herb butter spooned over the top. Garnish with fresh parsley, if desired.
