Ingredients
- 3 bone-in pork chops about 1/2-inch thick
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons salted butter
- 4 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Chopped fresh parsley for garnish opIonal
Instructions
- Preheat the oven to 400°F. Dry pork chops with paper towels. Season both sides of the pork chops with salt and pepper.
- In a large cast iron skillet, heat the olive oil over medium-high heat. Add the pork chops and cook for 2-3 minutes on each side, or until golden brown. Remove the pork chops from the skillet and set aside on a plate.
- If there is a significant amount of leftover oil in the skillet, carefully pour off most of it, leaving just enough to coat the bottom of the skillet (about 1 tablespoon) to prevent the garlic and herbs from burning.
- Reduce the heat to medium and add the butter to the skillet. Once the butter has melted, add the minced garlic, oregano, basil, and thyme. Cook for 1-2 minutes, stirring constantly, until the garlic is fragrant.
- Return the pork chops to the skillet, spooning the garlic and herb butter over them to coat evenly. Transfer the skillet to the preheated oven and bake for 3-5 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F).
- Remove the skillet from the oven and let the pork chops rest for 5 minutes. Serve the pork chops with the garlic and herb butter spooned over the top. Garnish with fresh parsley, if desired.
