  • 1 pork tenderloin about 1.1 pounds
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F.
  2. Prepare the pork tenderloin by removing any excess fat and silver skin. Cut the tenderloin lengthwise into two equal pieces for even cooking.
  3. Combine salt, black pepper, paprika, smoked paprika, garlic powder, onion powder, and dried thyme in a small bowl. Rub the spice mixture all over the pork tenderloin pieces.
  4. Heat olive oil in a large, well-seasoned cast-iron skillet over high heat. Add the pork tenderloin pieces and sear on all sides until browned, about 5 minutes total.
  5. Transfer the skillet to the preheated oven, and roast the pork uncovered for 10 minutes, or until it reaches an internal temperature of 145°F to 150°F.
  6. Remove the skillet from the oven, transfer the pork to a plate, and cover loosely with aluminum foil. Let it rest for 5 minutes before slicing.
