Cast Iron Skillet Banana Bread
This banana bread is baked directly in a cast iron skillet, combining mashed ripe bananas, sugar, oil, sour cream, eggs, and flour to create a moist and tender loaf. The optional nuts add a bit of crunch, complementing the soft texture. Baking in a well-seasoned skillet promotes even cooking and a slightly crisp edge, making it convenient to slice and serve.
Ingredients
- 3/4 cup sugar
- 1/2 cup neutral cooking oil generic cooking oil
- 3 tablespoon sour cream
- 2 egg
- 1 teaspoon baking soda
- 3 banana mashed
- 2 cups flour
- 1/2 cup nuts optional
Instructions
- Grease your cast iron skillet. *I use a 10 inch skillet, 12 inch works great too
- In a medium mixing bowl, combine all the ingredients.
- Stir until just combined.
- Pour mixture into skillet and spread evenly.
- Place in preheated oven, 350 degrees, and bake about 30-40 minutes, or until toothpick comes out clean from center.
- Remove from oven and allow to cool a few minutes before slicing. Enjoy!
