Cast Iron Skillet Banana Bread

This banana bread is baked directly in a cast iron skillet, combining mashed ripe bananas, sugar, oil, sour cream, eggs, and flour to create a moist and tender loaf. Ingredients

  • 3/4 cup sugar
  • 1/2 cup neutral cooking oil generic cooking oil
  • 3 tablespoon sour cream
  • 2 egg
  • 1 teaspoon baking soda
  • 3 banana mashed
  • 2 cups flour
  • 1/2 cup nuts optional

Instructions

  1. Grease your cast iron skillet. *I use a 10 inch skillet, 12 inch works great too
  2. In a medium mixing bowl, combine all the ingredients.
  3. Stir until just combined.
  4. Pour mixture into skillet and spread evenly.
  5. Place in preheated oven, 350 degrees, and bake about 30-40 minutes, or until toothpick comes out clean from center.
  6. Remove from oven and allow to cool a few minutes before slicing. Enjoy!
