Ingredients

  • 1 large cauliflower cut into florets
  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 teaspoon mustard powder
  • 1/4 teaspoon nutmeg freshly grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sharp cheddar cheese grated
  • 1/2 cup gruyere cheese grated

  1. Preheat the oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
  2. Place cauliflower florets in a large pot of boiling salted water. Cook for 5-7 minutes until just tender. Drain well.
  3. In a saucepan, melt butter over medium heat. Stir in flour to form a paste and cook for 1 minute. Gradually whisk in milk and cream, and bring to a simmer. Cook until the sauce thickens.
  4. Remove sauce from heat. Stir in mustard powder, nutmeg, salt, pepper, and cheeses until smooth.
  5. Arrange the drained cauliflower in the prepared baking dish. Pour the cheese sauce evenly over the top.
  6. Bake in the preheated oven for 20-25 minutes until the top is golden and bubbly.
