Cauliflower Mac and Cheese

Ingredients

  • 1 large head cauliflower cut into florets
  • 2 1/2 tablespoons olive oil
  • 1 tablespoon flour
  • 1 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 pinch nutmeg
  • Black pepper to taste
  • salt to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey jack cheese
  • Panko bread crumbs for topping optional

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Toss cauliflower florets with olive oil, flour, and a pinch of salt, then spread on a baking sheet. Roast for 15-18 minutes until tender.
  3. In a saucepan over medium heat, combine heavy cream, garlic powder, onion powder, black pepper, nutmeg, and salt. Bring to a simmer.
  4. Reduce heat and add cheddar cheese and Monterey Jack cheese, stirring until melted and smooth.
  5. Combine roasted cauliflower and cheese sauce in a baking dish. Sprinkle on panko bread crumbs if using. Bake in the oven at 425 degrees F for about 15 minutes until bubbly.
