Champagne Jello

Ingredients

  • 1 packet (about 2 teaspoons or ¼ ounce) powdered gelatin
  • 1 cup (240 milliliters) Champagne or other sparkling wine
  • ¼ cup (50 grams) granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Sprinkle the gelatin over ¼ cup of cold water in a small bowl and let it soften for five to ten minutes.
  2. Add the Champagne, sugar, and lemon juice to a small pot, and heat over low heat until the sugar has dissolved. Do not let the mixture boil.
  3. Turn off the heat and add the softened gelatin to the pot. Stir until the gelatin has completely dissolved into the sparkling wine mixture.
  4. Pour your Champagne jello into your desired containers and chill for at least three to four hours and firmly set.

Notes

  • This Champagne gelatin recipe will make about four small dessert servings or eight champagne jello palate cleaners.
  • To make Champagne jello shots, you will want to triple the recipe and use a full bottle of sparkling wine. Line an 8 inch by 8 inch pan with plastic wrap or lightly grease. Let the sparkling wine mixture cool until the gelatin is firm, and cut into 1 inch Champagne gelatin squares.
  • When buying sparkling wine for this Champagne jello recipe, select one on the drier side - a brut or extra dry. If you have an extra brut or if you prefer a sweeter jello, consider increasing the sugar in this recipe.
  • It's important to bloom the powdered gelatin before adding it to the sparkling wine mixture or it can clump.
  • If scaling up your Champagne jello, you will need 1 packet of gelatin powder per cup of liquid.
